Kafta bil Karaz

Hand-rolled lamb kafta simmered in a tart Morello cherry sauce — a dish from the mountains of northern Lebanon that your grandmother would recognize. Served bubbling in a copper pan with toasted pine nuts scattered on top.

Shish Taouk

Chicken thighs marinated overnight in yogurt, seven spices, and fresh lemon. Threaded on skewers and cooked directly over hardwood charcoal until the edges char and the inside stays impossibly juicy. Served with toum — the white gold of Lebanese cooking.
